Ingredients
6 tablespoons tahini
1/2 cup honey
1/4 cup coconut oil, softened or melted (can use butter)
1/2 teaspoon ground cinnamon
1 1/2 cups oats
2-4 tbsp brewer’s yeast (may need to work up to 4 tbsp as that’s when the bitter taste really comes through)
1/8 cup ground flax seed
1/4 cup chopped walnuts
1/4 cup pumpkin seeds
1/4 cup dark chocolate chips or cacao nibs (optional)
Directions
Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment.
In a medium bowl, stir together the tahini, honey, coconut oil, and cinnamon until well combined. Mix in remaining ingredients. Drop by teaspoonfuls onto the prepared cookie sheets.
Bake for 10 minutes in the preheated oven, or until edges are slightly brown. Cool on the baking sheet for a few minutes before removing to wire racks to cool completely.
