Deliciously spiced, hearty and filling, this oatmeal is a perfect way to start the day!

Good To Know
Pumpkin is an excellent source of carotenes, which have been shown to protect against cancer and cardiovascular disease.

Ingredients
1 1/3 cups rolled oats
1 2/3 cups almond milk
1/4 cup chia seeds
1 cup pumpkin, mashed
1 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ginger

Topping
Handful of walnuts
Drizzle of maple syrup

Directions
In a bowl, whisk together all ingredients (except walnuts and maple syrup). Cover and refrigerate overnight.

In the morning serve the oats either cold or warm them up on the stove until just warmed through. Top with walnuts and maple syrup.
