Chelsey Prince, Registered Holistic Nutritionist at Life Therapies, recently shared a wonderful recipe with her Facebook followers. It is one of those versatile recipes, great for busy families or those looking to incorporate more local produce into their diets. Expect to spend 15 minutes on preparation and rest assured this one pan wonder will make for easy clean up.
Maple Chicken Tray Bake

Ingredients
2 chicken breasts, cut into 2 pieces each (or 6 thighs)
3 large sweet potatoes, cut into 1 inch pieces
4 Tbsp avocado oil, plus more to drizzle
1 tsp thyme
1 Tbsp paprika
1 tsp dijon mustard
1 tsp maple syrup
2 cups Brussels sprouts (I use frozen)
Directions
Preheat oven to 375 degrees F.
On a rimmed baking sheet, drizzle the sweet potato pieces with avocado oil and sprinkle with thyme. Mix to coat.
In a bowl, combine the 4 Tbsp avocado oil, paprika, mustard, and maple syrup until it forms a paste. Add the chicken to the bowl. Ensure the chicken is well coated with the seasoning then add the chicken to the baking sheet with the sweet potatoes. Pour any extra seasoning over the chicken.
Bake in oven for 30 minutes. Remove from oven and add the Brussels sprouts. Return the baking sheet to the oven and bake for another 15 minutes or until the chicken is cooked and the Brussels sprouts are warmed through.
Chelsey’s Tip: With spring on the way, try substituting fresh local asparagus for the Brussels sprouts.
